Sure, GSAP can do all that animation but you'd need to create all the artwork including the 3D stuff. GSAP is only for animating literally any property of any object. It's not a 3D game creation tool. Plenty of gaming companies use GSAP. I'm not the right person to advise you about the best tools out there for game development in general, sorry. But I can confidently say that GSAP would be an excellent choice for handling the various animations.
